Banana bread is utterly delicious, the natural sweetness of the fruit lending itself perfectly to baking. This banana bread recipe is the perfect winter treat!

If you're looking to enjoy a flavorful snack or a sweet breakfast, bananas are a nutritious base for baking at home. Bananas also are one of the easiest ingredients to work with for new bakers.

Is there any greater pain than throwing away a too-ripe banana because it's just too brown to eat as a snack? The most ingenious home cooks know that saving even the mushiest bananas could parlay into a delicious breakfast or out-of-this-world sweet treat.

The accepted wisdom is that, to make good banana bread, you need bananas so ripe they practically dance into the oven of their own accord.

Begin by measuring out all of your ingredients into a bowl, keeping 1 banana to the side with some spare chocolate chips.

For the banana bread you will need:

  • 3 mashed bananas
  • 2 beaten eggs
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 1/2 cup sour cream or creme fraiche
  • 1 teaspoon vanilla extract or honey 

  • 1 cup of soft brown sugar 

  • 1 1/2 cups all purpose flour
  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 cup chocolate chips

Mix these ingredients together in a bowl until completely blended

Grease your baking tray with butter and pour the mixture into the baking tray

Layer over extra banana slices and chocolate chips over the top

Bake at 175 for about 45 mins or until golden brown
